#13 Sunchoke and Spinach Greens in Broth
Simple flavorful soup.
Chicken or vegetable broth
Jerusalem artichokes, peeled and chopped, cooked in the broth
Baby spinach wilted in the broth
Salt and Pepper
Emmer, or other whole grain, cooked ahead
I made this soup vegetarian for the harvesting event Saturday 11/8/14. I made my own broth of water from cooking twice the sunchokes for this recipe, celery, parsely, scallion, S&P. I sauteed garlic and onion in olive oil and also added a dash of turmeric and sqeeze of lemon.
